I had a picture up on my Facebook page of my Chorizo ‘stew’ a little while back and I got a flurry of responses from people requesting the recipe. Well, here it is!
250 Gram pack of Chorizo sausage (I ususally get Hans)
1-2 Tablespoons Paprika or adjust to taste
1 Onion – diced or chopped shallots
1 Tin of diced tomatoes
1 Tin Chickpeas
Handful of sultanas and pine nuts (optional)
1 Red Chilli – diced (optional and with or without seeds depending on your own taste/heat levels)
Fry off onion in a little olive/vegetable oil until softened
Add Chorizo and fry until oils in the Chorizo start to come out and colour the oil
Add in the handful of sultanas and pinenuts and stir (if you don’t like them you can leave them out but I ADORE pinenuts and find the sultanas add a lovely sweetness too!)
Add in about a tablespoon or a little more of paprika and add your chilli (optional if you don’t like it too hot)
Add in tin of tomatoes and a little bit of water swirled around the tin to get all the tomato mix out.
Turn down the heat and simmer for about 10 mins.
Serve as is with couscous or with a dollop of Greek style yoghurt or sourcream.
It mightn’t look very glam but it sure tastes good! (Even if I say so myself!;))
