Mr Meringue

Remember last year I wrote about Mr Iced Vovo being a one trick pony when it came to cooking? (See One trick pony no more!) And I promised that I would give you his Meringue recipe with some pics? Well here it finally is! I’ve been waiting for him to mix up another batch and that opportunity came at Christmas when he whipped up his specialty to share at our family lunch.

Ingredients
4 egg whites
1 1/2 cups of castor sugar
1 1/2 teaspoons of vanilla essence
1 1/2 teaspoons white vinegar

Method

  • Heat the oven to approx 150 degrees (fan-forced)
  • Beat egg whites
  • Slowly add sugar, vanilla and vinegar
  • Beat until stiff peaks form
  • Spoon out on to a flat tray lined with foil or baking paper and form a rounded shape
  • Bake in oven for 45 mins and then turn off and leave in oven until cold
  • Dress with double cream and topping of your choosing
