I’m very excited as this year Mr Iced Vovo and I will be hosting Christmas lunch with our families for the first time in our new home.
With about 16 people scheduled to attend we have split the load by allocating something for each family group to bring to share on the day.
I am going to be making a couple of salads (Greek, a slaw and maybe something new – to be determined), two cakes (see below), organising a platter of smoked salmon with trimmings and organising sweet and savoury nibbles in between. Mr Iced Vovo will be making his signature meringue (story and recipe to come!) and will be my assistant in the kitchen.
Christmas wouldn’t be Christmas without my shortbread (see My sure-to-tempt Christmas Shortbread) and Mum’s Honeymoon special (big hint there Mum! ;)).
This year I found Betty Crocker’s chocolate truffle mix at Woolworths and thought I’d trial them out (the spoon was tasty ;p).
Being a fan of Adriano Zumbo I’m going to make his delicious orange cake on Christmas day (see Zumbo’s orange deliciousness).
I’m also going to make Donna Hay’s wickedly decadent flourless chocolate cake (you’ve got to have something chocolate of course!) that I’ve made before and is always a crowd pleaser, especially with the chocolate fans!
I also spotted Donna Hay’s Caramel fudge chocolate brownies – now that’s my kind of brownie – chocolate and caramel is a winning combination in my eye! These brownies look like a wickedly moist concoction. I’m going to give this a burl for our Christmas Eve soiree that is celebrated with a few mates who drop by each year.
With a couple of packets of almond meal in the pantry I pondered what I could make and lo and behold I discovered a choc-chip coconut cookie recipe that I’ve tweaked a little, given a go and I can report they are both gluten-free and delicious! They are slightly chewy and moist but with that divine chocolate hit throughout. (Recipe and more pics will be up in the New Year)
Don’t worry I’ll follow up with information on the success of any new recipes with some photos too and of our Christmas spread in the New Year. Plus I have been scouring the supermarket for new treats and I’ll report back on some of those finds as well.
For example Woolworths has been going mad with their Gold Selection produce leading up to Christmas and what caught my eye was their Gold Tassie Salmon and a Truffle hand-crafted salami (anything with truffles always piques my interest). So, I will let you know what they are like in the New Year too!
