I popped into Sweet Envy at North Hobart last Friday to get a couple of sweet treats to share with my Mum for afternoon tea to help celebrate her birthday and was thrilled to find their own take on an Iced Vovo!
This mouth-watering treat consisted of a crisp biscuit style base, a luscious meringue swirled on top, a core of raspberry jam and a sprinkle of coconut on top. The meringue was soft on the inside but still with a lovely slight crispness to it. All the layers were balanced perfectly to give the right amount of sweetness.
Mum and I shared the Vovo, which I think they called a RoVo, and a lovely plumb Lemon curd tartlet which was also deliciously balanced between the tartness of the lemon and the sweetness of the base and curd mixture.
